I love cooking, and I'm always most at ease when welcoming friends and acquaintances to my table. I positively enjoy preparing last-minute meals using leftovers, but, like everybody else, there are days when my love of cooking seems to go out the window. Days when my mood is blue, and cooking become less of a joyful experience and more of a burden. These are the days when I crave something mouth-watering and delicious to comfort my mood and my stomach. Batch cookingThe solution to my lazy cooking days came to me one Sunday around lunchtime, when I found two potatoes at the m bottom of my vegetable basket. I checked the fridge and found some peppers and carrots that needed to be used. I rummaged around in the larder and found some tinned tomatoes. I didn't plan anything strenuous – it was Sunday afternoon after all! - but I had all the right ingredients for a potato and pepper casserole, something I could store in the freezer and get out whenever I needed Laziness is not an excuseBatch cooking has its advantages. You can use all the leftovers in the fridge, or the larder, and you can have a meal ready in minutes whenever you need it, especially if you've mastered the microwave. It can save you from the last-minute guest. There are so many easy-to-prepare dishes, but I find baked dishes are the best.
